Sopita is a traditional Mexican & Latin American comfort food which is a favorite of children much the same as macaroni & cheese is a favorite of children in the U.S. I hope you like my version of the recipe. Enjoy!
2-3 Tbsp Canola Oil
1 cup diced white onion
2 cups Fideo (cut spaghetti)
1 - 8 oz can of tomato sauce
10 cups of water
3/4 tsp of salt
1/4 cube if chicken bouillon cube (Knorr is my favorite brand)
Sour Cream
Begin by chopping 1/2 of a large white onion. Sauté onions in oil until soft & translucent. Add fideo & sauté until light brown color appears on pasta, add tomato sauce, water. seasonings and bring to a simmer stirring occasionally to avoid pasta sticking to the bottom of the pan. Simmer for ~15 min. Remove from heat and let cool for about 30 minutes before serving. Dallop individual servings with sour cream al gusto. Enjoy!
